Luckily, Peaceful Belly Farms in Boise grows more than 120 varieties of organic vegetables, giving them some wiggle room.
"We just have to try to make that up by planting more fall crops like spinach and radishes and turnips and things like that," Erskine said.
Farmers say drastic temperatures and fluctuating seasons could be a result of excess carbon in the atmosphere.
"We already have a really small window in Idaho for our crops, and with the fluctuation in weather, you see that window close even more," Requa said.
The fewer crops produced by farmers means a heftier price tag for you at the grocery store.
So, what can you do? Farmers say buying locally-grown fruits and veggies will cut back on trucking costs.
"If everybody in the nation just ate one meal a week from all local products, it would make a huge difference,” Erskine said. “So I think just buying locally is a huge part of reducing the carbon impact of what we grow and what we eat.
